  1. 150 g margarine 
  2. 350 g sugar 
  3. 1 tsp vanilla 
  4. 6 eggs
  5. 350 ml milk
  6. brandy 
  7. zest of one orange 
  8. 500 g flour 
  9. 2 tsp baking powder 
  10. 1 tsp mahlab 
  11. 70 g ground walnuts 
  12. For the glaze
  13. 500 g icing sugar 
  14. lemon juice

Step-step makingFluffy vasilopita with lemon glaze

  1. Cream the margarine and the sugar with the vanilla in a mixer at a strong speed. 

  2. Use another bowl to beat the egg whites until they form stiff peaks. 

  3. Beat lightly using a fork, the milk, the egg yolks, the brandy and the orange zest in a third bowl and combine the mixture with that of the margarine – sugar – vanilla, using a low setting on your mixer. 

  4. Continue at a very low speed adding the stiff egg whites into the mixture and mix until you have a well incorporated batter. 

  5. Using a different bowl sift the flour and add the mahlab, the baking powder and the walnuts, then add this to the mixture little by little using a spoon, continuing to beat at a very low speed. 

  6. When the mixture is well combined, empty it into a baking tray of 26 cm or the round Tupperware cake mold. 

  7. Bake at 180°C for 50΄-60.

  8. Prepare the glaze, which should be very thick by adding as much lemon to the icing sugar as it takes (about 1 lemon). 

  9. When the vasilopita has cooled, pour the glaze over it and let it drip to cover it. 

  10. Decorate your cake using your imagination and your taste…
