  1. 3 medium bananas, very ripe
  2. 3 eggs
  3. 2 tbsp oil
  4. Water
  5. 2 c almond meal
  6. 1 tbsp baking powder
  7. 1/2 tsp salt

  1. Heat oven to 350 degrees F. Lightly coat 9″x5″ loaf pan with cooking spray and set aside. Use a 2-cup measuring cup as this makes it easier to measure the wet ingredients.

  2. Roughly mash the bananas, and spoon into the 2-cup measuring cup. The banana should be about a cup, but the exact measurement isn’t important. All wet ingredients together should total 2 cups.

  3. Add eggs, oil and water to measuring cup. Stir with a fork to blend. Then finish the cup to the 2 c mark with water. In a medium bowl, whisk together almond meal, baking powder and salt until well blended.

  4. Add the wet ingredients from the measuring cup to the dry ingredients and best for 2-3 minutes or until well combined. Don’t over mix. Stir in nuts.

  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-55 minutes or until a toothpick inserted in middle of bread comes out clean. Remove from the oven and place on wire rack. Remove bread from pan and Turn it on its side to cool completely before serving.
