  3. 1/4 cup dry white vermouth
  4. 1/4 cup white wine vinegar

  6. 1 clove garlic, minced
  7. 4-5 scallions, chopped
  8. 2 stalks celery
  9. 2 tsp capers
  10. 1/2 cup chopped fresh parsley

  1. Preheat oven to 425F (220C). Lightly coat a nonstick baking sheet with cooking spray.

  2. Place potatoes in a microwave safe dish, cover and cook on high power for 6 minutes. Dry potatoes and place on baking sheet. Lightly coat potatoes with cooking spray and bake for 20 minutes or until golden brown.

  3. Meanwhile, prepare dressing, combining mustard, vermouth, vinegar, olive oil, salt and pepper to taste; whisk to combine.
