  1. Find cassava that is nice and thick, fresh from the shamba is best

  2. Firewood is best but also a charcoal jiko works just fine

  3. If using firewood, you need to light it for a while so charcoal can collect below. When you have enough charcoal, make a hole sort of oven using ash. Put the cassava whole in and cover with more ash. Add the hot coal on top and let it roast slowly

  4. Keep turning the cassava every 10 to 15mins for even roasting. Don’t use too much coal or it might burn before getting cooked through

  5. If using a charcoal burner, put the cassava in the lower compartment where the ash normally collects and roast. Keep turning also for evenness. You know it’s ready if a knife can pierce easily

  6. Mix chilli powder with salt, serve with the ready cassava. With hot tea and the lemon wedges. You peel as you eat so when it remains you can easily warm it by putting back in the charcoal for a few mins
