  1. 350 g Chicken Meat (cut into bite size)
  2. 250 g Oyster Mushrooms (cut into bite size)
  3. 2-3 cups Stock
  4. 1-2 pc Lemongrass Stalk (bruised)
  5. 30 g Galangal Root (finely sliced)
  6. 15 g Fresh Coriander (rough chop, stems and leaves separated)
  7. 1/4 cup Lime Juice
  8. 2 Tbsp Fish Sauce
  9. 1 sprig Kaffir Lime Leaves
  10. 20-40 g Red & Green Chillies (rough chop, deseed) or Bird’s Eye
  11. 0.5-1 cup Thai Chilli Jam (optional)
  12. if needed Salt

Step-step makingTom Yam Gung – Thai Spicy and Sour Soup

  1. STOCK: in a pot, add the Stock, Chicken, Galangal, Lemongrass, Kaffir Lime Leaves and Fresh Coriander Stems. Bring it to a boil.

  2. SHROOMS: once boiling, add the Mushrooms, Lime Juice, Fish Sauce, Chillies, Thai Chilli Jam and mix well. Bring it a simmer and cook until the Chicken is done. Season if necessary. Garnish with Fresh Coriander Leaves.
