  1. 250 gms washed roughly chopped spinach leaves
  2. 2 medium sized potato cut into cubes
  3. 1 small onion chopped
  4. 1 medium tomato chopped
  5. 1 teaspoon ginger paste
  6. 1/2 teaspoon turmeric powder
  7. 1 tablespoon corriandar powder
  8. 1 green chilli chopped
  9. 8-10 fenugreek/methi seeds
  10. 2 green cardamoms
  11. 1 small cinnamon stick
  12. 1 teaspoon salt
  13. 1 tablespoon chopped corriandar leaves
  14. 2 tablespoon cooking oil

  1. 1st roughly chopped the spinach & blanch it in hot water for 3_4 minutes so that the raw smell goes away.Then heat up oil in a pan & fry the potatoes first.

  2. Then in the same oil add fenugreek seeds, green cardamom & cinnamon to temper the oil. Then add the onion & saute until translucent.

  3. Then add chopped tomatos,green chillies,ginger paste & mix well.After that add turmeric powder & corriandar powder & saute for 3-4 minutes

  4. Once the spices are done add blanched chopped spinach and incorporate everything together.

  5. After cooking for 6-7 minutes adjust salt & add the fried potatoes & mix. Then cover it up for 3-4minutes as after adding salt it will release some water so it won’t stuck on the bottom of the pan.

  6. Switch off the flame & serve it warm with rice or roti/paratha.
