  1. 1 teaspoon olive oil
  2. 1 medium onion, chopped
  3. 1 celery stalks, chopped
  4. 1 cup carrots, chopped
  5. 2 cloves garlic, pressed or minced
  6. 1/2 cup bell peppers, seeded and chopped(any colour or mix of all as per your choice)
  7. 2 cups water
  8. 1 large tomatoe, chopped
  9. 1 cup cooked black or red beans
  10. 1 teaspoon ground cumin
  11. 2 teaspoons fine sea salt
  12. 1/2 cup frozen peas
  13. 1/2 cup frozen corn kernels
  14. 1 cup quinoa (dry/uncooked)
  15. 1/4 cup chopped fresh cilantro
  16. 1/8 teaspoon red chilli powder
  17. 1 tsp sauce(shezwan sauce)
  18. as required Freshly ground black pepper
  19. as required Coriander leaves for garnish
  20. as required Some lemon wedges

Step-step making Recipes easy to make Mexican Quinoa Stew

  1. Soak beans at night and boil them in the morning with salt and water till cooked. You can use tinned ones too

  2. In a pan, warm the oil over medium heat. Add the onion, garlic, celery, carrots, tomato and peas.

  3. Saut until the vegetables are tender.
    Now add corn and cooked beans, cumin, salt and season with both pepper powders and water. Cover and let the tomato be mushy to make thick gravy.

  4. Wash quinoa 3-4 times and let it cook in water in a separate pan. But you can cook it in the same pan along with gravy too.

  5. Once boiling, lower the heat, cover the pot, and let the gravy simmer until the quinoa and all vegetables get nicely incorporated with all the flavors.

  6. You can check the taste of gravy at this stage and add more salt and black pepper if needed
    Add Coriander leaves generously and give a nice mix
