  1. 1 (16 oz) pig flat rice noodles
  2. 1/2 C fish sauce
  3. 14 C agave syrup
  4. 1 lime, juiced
  5. 3 garlic cloves, minced
  6. 1 tsp coconut oil
  7. 1 egg, beaten
  8. 2 Tbsp coconut oil
  9. 8 oz skinless, boneless chicken, sliced thin
  10. 1 onion, medium, sliced thin
  11. 1 shallot, sliced thin
  12. 1 medium head cabbage, sliced thin
  13. 1 C shredded carrots
  14. 1 dash sriracha sauce, or to taste
  15. 2 Tbsp thai basil
  16. 1/2 C peanuts, roughly chopped

Step-step making Recipes easy to make Pad Thai with chicken

  1. Bring water to a boil in a large pot, about 5 minutes. Remove from heat and toss in noodles; stir and wait 5 minutes more. Drain and rinse in colander.

  2. Combine fish sauce, agave syrup, lime juice and garlic in a bowl and set aside. Heat 1 Tbsp coconut oil in a small pan over low heat. Add egg and cook through without flipping, about 5 minutes. Set aside on a cutting board to cool, about 15 minutes. Roll into a log and cut into thin strips. Set aside.

  3. Heat 2 Tbsp coconut oil in a skillet over high heat. Add the chicken, onion and shallot and saute until fairly browned, 5-10 minutes. Add cabbage, carrots, and drained noodles; saute for 5 minutes more. Add fish sauce mixture, egg strips, basil, and sriracha sauce to the skillet. Toss well, cover with a lid, and cook for 2 minutes. Remove lid from pan and toss in peanuts. Ready to serve.
