  2. 2 litre Full cream milk
  3. 2 tablespoons White vinegar
  4. 1/4 cup Brown/white sugar
  5. 1 teaspoon Cardamon powder
  6. 2-3 drops Rose water
  7. 3 tablespoons Fine semolina
  8. 2 tablespoons Gulkand
  9. 1 tablespoon Ghee/clarified butter
  10. 2 tablespoons slivered pistachios
  11. 2 tablespoons slivered almonds
  12. 2 tablespoons chopped cashews
  13. 1 tablespoon golden rasins
  14. For garnish:
  15. Some slivered nuts to decorate
  16. as required Rose petals

  1. Boil milk in a big sauce pan. Mix vinegar in 2 tablespoons of water and add to the boiling milk.

  2. Keep stirring, the milk will start to curdle.

  3. Then in around 4-5 minutes the cheese/paneer/chenna and whey will separate.

  4. Put through a fine sieve. Let the whey drain out but not completely. Leave some liquid in the cheese.

  5. Add it to a mixer jar. Add rose water, cardamon powder and gulkand. Grind for few seconds.

  6. Add brown sugar and some of the liquid/whey if the mixer looks very thick and mix again.

  7. Add melted ghee to a bowl.

  8. Add all the batter in the bowl. Add dry fruits leaving some to add on top. Mix well.

  9. Grease a 7 inch cake tin and line the bottom. This helps in easy removal of the chenna poda. Preheat oven @160°c

  10. Add the chopped nuts and keep in the oven to bake for 30-35 minutes until the top is cooked and not sticky when touched.

  11. This is how it looks once done. The top browns little. Chenna Poda is ready with yummy rose flavour. Decorate with rose petals before serving
